This is sweet upgrade and I'm really glad I did it. I should have done it much sooner, I rode my '25 Road Glide with the uncomfortable stock pedal for almost 4,000 miles before I made the switch and then it took me a long time to get used to the new position. Now I've got more than 2,000 miles on the new pedal and I'm happy, it's way more comfortable, especially in heavy traffic or anytime I need to keep the foot on the pedal. Because it's so much lower and farther forward I can ride the pedal all day if needed, but when I'm on the open road and can ride with the foot flat on board position it's easier and faster to get my foot on pedal, with none of those toes trapped under the pedal and having to pull the foot back or lift it up, or twist it out to move into a braking position contortions.
I spoke to Rick before I bought the 2" extended pedal and he told me to get the 1" extended, and he was probably right, it's so close to the chopped engine guard that you can't put much more than your toes on the pedal. That's not a problem for me because I've got a newer bike with fantastic brake feel and pressure but if you've running an old beater that needs to be stomped on it might be an issue. The longer 2" is close enough to the top bar of the chopped engine guard that you can't use the ball of your foot on the pedal and it's very easy to put the toe of my size 11 boot too far forward and then guess what? No matter how hard you stomp on the engine guard the bike does not slow down because that means you aren't stepping on the pedal, and for that reason alone I would recommend the 1" extended pedal, it's still 20 degrees lower and it's farther forward. If you have don't have guards, or have old style tall engine guards that don't interfere with your boots then I would definitely go with the longer extension, but if I had to choose again I'd likely go with the 1" extended, especially if my boot length was less.
The stock pedal didn't fit me and I'm not even one of the tall riders that I've heard have a real problem, I've got a 28" inseam, stiff old legs, heavy size 11 boots and ankles that don't really bend anymore. I just really hated having to do the gyrations to get my foot onto the pedal, I couldn't put my heel on the board at the same time my foot was on the brake without cramping up my calf or riding the brake, it was physically taxing on my thigh to hold my leg like that which made riding in traffic a pain, literally. But that is in the past, I just got back from a 1.5k winter run on wet hilly twisty bumpy roads with lots of braking and more than 30 miles of slush bombing, it would have have been terrible with the stock pedal and I don't know if I could have done it, but the Softbrake extended pedal gave me the combination of comfort and control that I needed. For me the 2" extended brake pedal is comfy and I'm very satisfied.
